"Zuppa Minestrone" and "Zuppa Fantasia" are made with a melange of pure grains, organically grown on the Colfiorito Plateau, in Umbria, and painstakingly selected to create a satisfying flavor for soup lovers... Green and red lentils, Borlotti and Cannellini beans, farro "perlato", barley and other varieties of grains and beans typical of the fertile hills of Umbria need just a touch of Federici extra virgin olive oil to come together beautifully and release all their rich, paesant flavor... A few Vine Tomatoes by Maida add a splash of color and an intense Mediterranean flavor. Panic striken? You have never made a soup before? Here's how: sautee a mix of chopped celery, onion and carrot in EV olive oil. When soft, add soup mix and enough water to cover. Let it simmer for about 30 minutes. Experiment and add other ingredients such as prosciutto, pancetta, rosemary, sage, parsley, cherry tomatoes, a few leaves of spinach...serve the soup warm with a drizzle of olive oil and some freshly grated Parmigiano Reggiano.
